These might be called "scalloped hash brown potatoes". What fun would that be? The initial recipe came from my nextdoor neighbor of close to 30 years. I changed it up from her use of frozen hash brown patties to Simply Potatoes. When the local Publix decided not to carry those anymore, I tried bags of frozen shredded hash browns. That worked as well. Believe me though, when Publix came to their senses, I went back to those not frozen shredded hash browns.
Note: this recipe says 12 servings. I need to add "or 4 college water polo players." This is based on actual real-life experience. You can easily half the recipe.
OK -- this is the first in a series of not-heart healthy, but totally yummy and easy recipes...
Mary Potatoes

- Melt the butter in the half and half (I do this in the microwave); mix in the chopped onion and add salt and pepper to taste. Put the potatoes into a 9" x 13" baking dish. Pour the half and half mixture over the potatoes; top with the parmesan cheese.
- Bake at 400 for 35-45 minutes -- until the top is golden brown.
- Serves 12 normal people, or 3 or 4 water polo players.
